Easy Toaster Oven Shepherd’s Pie (Vegan, AIP, Low Carb, and Top 8 Allergy Friendly Options)

My family and I love Shepherd’s Pie. We have a base recipe of 1lb of meat (usually ground beef), corn, mashed potatoes, and some basic spices. However, since I don’t eat beef anymore, I had to get a bit creative.

This recipe is incredibly versatile and can be made low carb as well as vegan too. I made mine below with chicken and it came out amazing. I found it easier if you prep the day before or cook one ingredient per day to help make putting it all together easier.

If you’re wanting it to be lower carb, replace the mashed potatoes with pureed cauliflower. You can also substitute the meat for your meat of choice. Perhaps chopped mushrooms might bring an interesting texture and flavor? Or soy crumbles too!

Also, when using a container, make sure it is toaster oven safe. You can also just put this meal in a regular oven for the same temperature and time frame.

Easy Toaster Oven Shepherd’s Pie

(Vegan, AIP, Low Carb, and Top 8 Allergy-Friendly Options)

Chicken version:

Ingredients:

  • 1lb ground chicken
  • Parsley (to taste)
  • Salt
  • Pepper
  • Garlic powder
  • Mashed potatoes (or mashed cauliflower for low carb!)
  • Zucchini cubed

Beef version:

  • 1lb cooked ground beef
  • Parsley
  • Salt
  • Pepper
  • Mashed potatoes
  • Corn

Vegan version:

  • 1lb ground meat substitute
  • Salt
  • Pepper
  • Mashed potatoes or cauliflower
  • Chopped vegetables of choice
  • Parsley
  • Garlic

Directions:

  1. Peel and dice your potatoes (or cauliflower for low carb) before bringing them to a boil for about 10 minutes or until soft.
  2. Drain your pot before mashing using a masher. You can also use a food processor or hand blender to whip the potatoes smooth or puree your cauliflower. Set aside.
  3. Cook your meat of choice until brown in a skillet on medium-high heat.
  4. Transfer your meat into a casserole dish.
  5. Dice your vegetables of choice into bite-sized pieces before adding them to the casserole dish.
  6. Once your meat and vegetables are in the dish, add your seasonings to taste and stir to combine.
  7. Then add and smooth your mashed potatoes (or cauliflower) on top. After this step, you can sprinkle paprika on top if your not AIP or have difficulty with nightshades.
  8. Place your dish in the toaster oven with the rack at its lowest at 400 degrees for about 10 to 20 minutes. You just want the mashed potatoes to start becoming slightly brown.
  9. Carefully remove from the toaster oven and serve.
